Thomas: “But these staff don't want to be given more work, such as lists to fill out or extra checks. So you need to collect the data in a way that doesn’t bother them, and make sure they are motivated. On average, 25 days of a chef's year are spent cooking food that goes straight in the bin. If he or she can reduce the time prepping unwanted food, they spend fewer hours working.” 

Elke dag van de week blijkt zijn eigen cateringkarakter te kennen. Nina: “Wij kennen nu de ideale lunch voor alle deelnemende bedrijven op iedere dag. Uit de pilot bleek bijvoorbeeld dat donderdag met grote afstand de dag met meeste no-shows was. Als je dat weet, loont het de moeite bepaalde partijen de dag ervoor even na te bellen om te vragen of iedereen daadwerkelijk komt.”

Nina: “Wie meerdere partijen op een dag heeft, hoeft niet voor iedere partij een buffer aan te houden voor als er een tekort is. Voor 3 partijen kun je best 1 back-up hanteren. De angst om te weinig te hebben, zorgt voor waste.”
