Ana believes in a philosophy she calls kilometer zero. All the ingredients she uses come from the fields, rivers, and gardens surrounding the restaurant. The resulting dishes are fresh, earthy, and pleasantly bitter. Her partner Valter is a sommelier, and he makes his own cheeses, which he leaves to age in the restaurant’s basement.
